About the coffee
This coffee comes from second-generation farmer Senan Alonso, whose farm is situated at 1715 MASL in Moniquira, Boyaca. Senan has been producing coffee for 40 years but lacks space and access to milling facilities. For the past three years, he has worked with our friends Ronaldo and Valentina at Disruptiva Coffee, who admired his dedication to improving quality and yields.
Disruptiva, with help from Ronaldo’s father at their family-owned washing station, empowers local farmers by educating them on the specialty market, innovative processing methods, and improved farming practices. Their goal is to enhance product value and open access to new markets. This is the first coffee they have exported directly to the UK.
Disruptiva have experimented with the lesser-known Costa Rica 95 varietal for two years to increase its complexity and boost prices for producers. This coffee is processed in "Cochades," a form of extended ferment washed, where batches are collected each day and anaerobically fermented for 2.5 days. The cherries are then depulped and washed before a further 24 hours of fermentation and drying for 12-15 days.
