About the coffee
The Masha Washing Station, built in 1989, is located in Gihororo, within the Kayanza region. Named "Masha" from the Kirundi word for "herds of cattle" due to the area's cattle abundance, it serves over 1,128 farmers who deliver cherries. Despite widespread coffee cultivation in Burundi, smallholders produce small harvests, typically from 200-250 backyard trees. Many of these trees are growing the Red Bourbon variatal and harvesting is mostly a family effort, with selective hand-picking during the season of mostly the Red Bourbon varietal.
The Lacafe ORO yeast used during fermentation has been specifically developed for coffee. It has a specific metabolism that enhances the coffee's fruity characteristics and the extended fermentation allows the beans to absorb metabolites creating a complex flavour profile that is full of Plum Jam, Apricot and Manuka Honey.
