About the coffee

From the lush, mountainous region of Huatusco in Veracruz, Mexico, comes a coffee rooted in both history and craftsmanship. Finca Monte Azul is part of a legacy that began in the 18th century, when coffee first arrived at the port of Veracruz. Today, the region remains one of Mexico’s most respected growing areas, known for producing high-quality beans in small, carefully tended lots.

What makes this coffee truly special is the environment it's grown in. Huatusco’s high altitudes (1,600–1,800 meters), abundant rainfall, and cool nights create ideal conditions for cultivating exceptional coffee. These natural factors slow down the fermentation process during harvest, allowing more complex flavors to develop.

The beans are a mix of Bourbon and Catimor varieties, which have been meticulously hand-picked and undergo a washed process with a 72-hour fermentation, followed by slow sun-drying. This method enhances clarity in the cup and brings out the coffee’s vibrant floral notes, a subtle chocolate sweetness, and a silky, medium body. A medium roast further balances the acidity and depth, resulting in a smooth, clean finish that’s both refreshing and satisfying.

Coffee is made to be drunk when the beans are at their peak freshness. It's why we roast to order, pack it and post it.

You'll want to keep coffee in bean form until the past possible minute to get the full flavour.
