Huatusco’s high altitudes (1,600–1,800 meters), abundant rainfall, and cool nights create ideal conditions for cultivating exceptional coffee. These natural factors slow down the fermentation process during harvest, allowing more complex flavors to develop.
The beans are a mix of Bourbon and Catimor varieties, which have been meticulously hand-picked and undergo a washed process with a 72-hour fermentation, followed by slow sun-drying. This method enhances clarity in the cup and brings out the coffee’s vibrant floral notes, a subtle chocolate sweetness, and a silky, medium body. A medium roast further balances the acidity and depth, resulting in a smooth, clean finish that’s both refreshing and satisfying.
